Gourmet Traveller’s Pear and Green Apple Winter Slaw recipe

With fine slithers of apple and pear, this punchy Japanese side is a balancing force on the table.
SERVES 4 // PREP TIME 5 MINS
INGREDIENTS
1 each green apple, Packham pear and nashi, cut into julienne and sliced
50 gm shredded daikon
30 gm mizuna
Purple shiso, to serve
YUZU KOSHU AND SESAME VINAIGRETTE
2 tbsp lemon juice
1 tbsp soy sauce
1 tsp each sesame oil
1 tsp yuzu kosho (see note)
METHOD
1 For vinaigrette, place ingredients in a bowl, season to taste and whisk to combine.
2 To serve, combine apple, pear, nashi, daikon, mizuna and shiso in bowl; drizzle over dressing.
Note: Yuzu kosho is a Japanese condiment made from fresh chillies (usually green) combined with the rind and juice of the fragrantly tart yuzu, then fermented. Available from Japanese grocers and select supermarkets.
Drink suggestion: Heiwa Shuzo Yuzushu, Wakayama prefecture.
